The Special Dish of Christmas

Guys, do you know what the special food of Christmas is? Ginger cookies! Yes, ginger cookies is the special dish of Christmas which is made of flour and powdered ginger. Ginger cookies are fragrant with molasses, ginger, cinnamon, nutmeg, and cloves. This dish is traditionally eaten at Christmas day, especially in foreign country. In Indonesia, it isn’t common for us. However, my family and I have ever made ginger cookies at Christmas day. Have you ever made this delicious dish? It isn’t difficult to make this special dish. Now, I will explain you about the step to make special ginger cookies with royal icing.

First of all, the ingredients and the utensils must be prepared. You will need 650 grams flour, 100 grams powdered sugar, 75 grams palm sugar, 300 grams unsalted butter, 1 egg, 2 teaspoons powdered ginger, I teaspoon baking soda, ¼ teaspoon spices (cinnamon, nutmeg, cloves), ¼ teaspoon salt, and 2/3 cup (160 ml) molasses. The utensils are oven, electric mixer, bowl, and wax paper.

Okay, let’s star to cooking. First, the flour, salt, baking soda, spices are whisked together in a large bowl with electric mixer or with a hand mixer. They are set aside. Butter, powdered sugar, and palm sugar are whisked until light and fluffy. The egg and molasses are added and beaten together with the butter mixtures. The flour mixtures are added gradually. They are then beaten until blended together. The dough is divided in half. They are wrapped in plastic wrap or wax paper. Then, they are refrigerated for at least two hours or overnight. Next, oven is preheated to 350 degrees F (177 degrees C). The dough is rolled out to a thickness (about ¼ inch). They are then cut into shapes with cookie cutters and placed on baking sheets about 2 inches between each cookie. The cookies are baked for 8 to 12 minutes in the preheated oven. The time of baking is depending on the size of the cookies. Small ones will be taken about 8 minutes, larger cookies will be taken about 12 minutes. They are done when the edges are beginning to brown. Then, the cookies are removed from the oven and placed to a plate.

Ginger cookies are decorated with royal icing. Royal icing is a mixture of powdered sugar, lemon juice, and egg whites. You will need 2 egg whites, 2 teaspoons lemon juice, and 350 grams powdered sugar. First, the egg whites and the lemon juice are beaten with electric mixer. Powdered sugar are added and beaten on low speed until combined and smooth. Food color is added to give color in the royal icing. Finally, the cookies are covered with the royal icing. Ginger cookies with royal icing are ready to served.
